1 - I would like to know if a 3bet shove move made by us, holding something like AK or AQ is +EV because statistically villan has more Ax that are dominated than Ax that dominate us OR just because he is 3betting a lot we put him on a wide range and because of that the move is more likely +EV.
I want to know if its a statistical thing or a villan range thing.
2 - What are the best hands to do this move?

You need to be more specific. You're talking about villain's 3-betting range but you're asking a question that has us potentially 3-betting strong hands.
In general, you 3-bet hands that strong because players will call with worse. The same theory applies to a shove, except you should still make the shove even against some players who have a stronger calling range. Why? Because they are often open raising weaker hands that they will fold, allowing you to gain value by winning the pot immediately (in short, this is fold equity).
But all sorts of things go into determining if a hand should be shoved over a PFR. How often is your opponent opening? How often is he folding if you shove? What hands does he call with? How does your hand stack up to the hands he calls with?
There's a lot to consider. It's not a range vs calculation thing, the calculation is made up of various components, including a player's range. You can simplify (and players often do) this in situations.
If you hold AK, a guy raises 3x the bb 20bb deep, you can just determine this is an easy shove. Why? You're ahead of most player's calling ranges, you have a good amount of fold equity if the player raises even a medium strength range and you're only 20bb deep, so every time he folds he has to make up that much more value that you win without showdown during the times he actually calls you, and AK is pretty strong so it's not at all likely his range will be able to do that (You'd literally have to open a very small range and fold a miniscule amount of hands to be ahead of AK in this spot, it just doesn't happen).
So you can simplify it sometimes, but it's really just a case of the decision being very clear and apparent to you without any further thought or analysis. If you have a shove/fold strategy 8bb deep, you'll snap shove AT, but it may take you a minute to decide on Q4o. This is sort of similar, deciding which hands to 3-bet shove in a spot or not. If I didn't mention it, don't forget stack sizes, they impact this decision quite a bit.

Example:
A villan has shown to be aggressive, he is 3betting us a lot, almost every hand we raise 3xbb preflop.
We catch AQ, we raise 3xbb, he 3bets us as usual, we shove.
What I want to know is if this move is +EV because:
1 - We have AQ and statistically AQ wins vs. most of hands in an all in pre-flop situation
OR (/AND)
2 - The villan is 3betting with a wide range and that makes it statistically more improbable that he has a better hand that AQ.
