It depends what structure, site and buyin level you are talking about.
For PokerStars, I would roughly say the top players are achieving winrates of:
63-67% for low stakes (5 to 30 dollar buyin) regular speed games.
60-63% for low stakes turbos.
55-58% for high stakes turbos.
58-62% for high stakes regular speeds.
Mid stakes falls somewhere in between all of those numbers, but these are just rough estimates off the top of my head. It's easier to correspond them to ROIs for me, for example, an ROI of 10% is about the highest I see long term in the $115 turbos on PokerStars. I don't see any legitimate sample sizes of higher than 7% ROI in $230 turbos or higher as well.
Also note that sample sizes will have a ton to do with true winrates and that the amount of tables you play has a lot to do with your actual ROI and winrate. I know I can hit around 8-10% ROI in the $115 turbos single tabling, but I'm around 5-7% ROI 2 tabling them.
